Tijuana-style tacos are attracting crowds across LA. While this type of taco varies widely, most have incredibly fresh tortillas, frijoles de olla, marinated meat, and a large dollop of fresh guacamole. A relatively new entrant to the sidewalks of LA is Perro 110 and they only prepare Tacos Perrónes.
You may be asking, what is Tacos Perrón? In its simplest form, a Taco Perrón is basically a flour tortilla filled with marinated skirt steak, salsa, beans, and guacamole. While this sounds simple to make, it’s all about preparation and execution.
When I arrived at their South LA location, the staff of Perro 110 was setting up for that day. Setting up a portable cooking station on the sidewalk without power is a big deal. They brought large igloo coolers, large bottles of water, a huge stockpot, and other supplies needed to operate the business.
Since the menu only lists their Perro (Taco Perrón) and quesadilla, ordering is a simple matter. “How many”, he said to me as they were ready to serve that day. I replied “Five”. “You realize that they are big?” and I nodded “Yes, they are going to 5 different people”. The tacos are priced at $6 each.
It’s fun to watch your order as it goes through the stages of preparation. The journey begins with a sizeable amount of shredded mozzarella cheese applied to the grill. At the same time, they add Mom’s flour tortillas to warm on the grill. Once the cheese has browned, it is applied to the tortilla.
Perro 110 uses sizable cuts of marinated grilled skirt steak. The meat is tender and has a pleasant smokey flavor. Frijoles de olla, diced red onions, cilantro, chipotle crema, and salsa roja are added to the taco. This results in a taco that will satisfy most appetites. In fact, you may need a nap after eating one of these!
For the vegetarian, they offer a Quesadilla ($3). It is the same as the Perro without the meat.
