Hatch chile is a unique pepper grown in the Hatch Valley of New Mexico. Nutrient-rich soil and varying temperatures create an earthy, buttery-flavored chile highly sought by chileheads. A New Mexican cooking instructor explained that if the chile were grown in California, it would resemble an Anaheim chile.
Bristol Farms and Lazy Acres sells fresh roasted chiles by the case. You can purchase smaller quantities inside Bristol Farms if that is too much for you. They sometimes offer fresh chiles by the pound and small amounts of pre-packaged roasted chiles. Be sure to watch for the prepared food made with Hatch chiles. Bristol Farms has a flair for creating delicious items made with Hatch chiles.
If you purchase a case, wait a while to allow them to cool. Using a knife, peel the skins and remove the seeds. Save some of them whole for chile relleno; the others may be cut into strips and used in salsas and general Mexican recipes. Place them in Ziploc bags and store them in the freezer. You can often substitute Hatch chiles for jalapenos and transform ordinary enchiladas into something special.

I actually it my 10 lbs of fresh pasted hatch chilies at a Melissa’s stand outside my local Ralph’s this year. Bit peeling and seeding them took a couple of hours.

One year I bought mild hatch chilies at Bristol Farm. But someone has mixed up the extra hot with the mild and when we tried to eat my casserole we couldn’t because it was off the scale spicy. I had given some of the casserole to my neighbor and to this day he thinks I love super spicy things.
